You can keep your Home Made Zucchini and Carrot Bar in the refrigerator for several days. I prefer to eat my warm, straight from the oven ... yes ... I like to bake with zucchini.

INGREDIENTS
- 1 cup grated zucchini
- 1/2 cup of grated carrots
- 2 finely chopped shallots
- 3 eggs, lightly beaten
- 1/3 cup grated cheese
- 2 tablespoons finely chopped parsley * optional
- 1 tablespoon of almond flour (you can use flour if you want)
- Olive oil
INSTRUCTIONS
- Heat a little olive oil in a medium saucepan over medium heat. One tablespoon is enough.
- Add zucchini, carrots, and shallots, and cook, stir, for 4-5 minutes or until vegetables are softened.
- Remove from heat and set aside to cool for several minutes.
- Combine vegetables with eggs, cheese, parsley (* optional) and flour in a large bowl and mix all ingredients well.
- Place this mixture in a square baking pan (spread a little butter or ghee beforehand) and flatten the surface.
- Bake in the oven for about 12 minutes @ 375 degrees, or until set. Then remove from the oven, set aside to cool. Take them out of the pan, cut them into bars.
